Yes! Broccoli Soup for You!

Tuesday, October 12, 2010 by Jan Sinatra
During the cooler months, Dr. Sinatra and I love to cook up a big pot of soup for supper. This particular recipe is not only delicious, but it is chock full of blood thinners like garlic and curry, as well as DIM, which has been shown to help protect against breast cancer.

Enjoy!

Broccoli Soup
(Makes 5 servings)
  • 5 cups low sodium chicken stock
  • 1 lb. fresh broccoli, chopped
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 1 Tbsp. freshly squeezed lemon juice
  • 2 Tbsp. curry powder to taste (optional)
  • Black pepper to taste

In a large pot, bring the stock to a boil over medium heat. Add the broccoli, onion, and garlic, and simmer until soft, about 30 minutes. Purée the soup in a food processor or blender, return to the pot, and add the lemon juice and pepper. For an extra kick, add the curry powder right before you purée the soup.

I would love to purchase some of your products but live in Australia. Can you tell me how I can order. Thank you

Love the soup receipe, and I am going to go make it for lunch right NOW! I do not have Broccoli, so I am going to use Cauliflower that I just bought at a Farm Market. I love cooking with curry! This sounds so good that I am passing it on to my fellow Weight Watchers next Tuesday, and copying for three other friends. Thank you, Sheila from Florida

Hi Sheila, Thanks so much for sharing your soup enthusiasm with us! Autumn is my favorite time of year to reconnect with soup-centered meals, even when we spend time in warmer Florida where you live! Great move with the cauliflower substitution--- and the farm stand shopping! Please let us know how the creative adapted recipe turns out, and how your friends at Weight Watchers react to it... You've got the right idea; recipes should be fun, shared, and modified to suit your personal taste, what's in season, and what's on hand... Bon appetite! Jan
